Roasted Brussels Sprouts

Ingredients
  • 1 lb Brussels sprouts trimmed and halved
  • 2-4 Tbl Fruit infused balsamic vinegar (pear, fig, or apple would all be good)
  • 2-4 Tbl Dried cranberries *optional
  • Kosher salt to taste
  • Black pepper to taste
  • cooking spray Organic cold pressed extra virgin coconut (or olive) oil

  • 1 lb Brussels sprouts trimmed and halved
  • 2-4 Tbl Fruit infused balsamic vinegar (pear, fig, or apple would all be good)
  • 2-4 Tbl Dried cranberries *optional
  • Kosher salt to taste
  • Black pepper to taste
  • cooking spray Organic cold pressed extra virgin coconut (or olive) oil
Instructions
  1. Preheat oven to 425° F.
  2. Line a baking sheet with foil and lightly spray it with cooking spray.
  3. Trim and half the Brussels sprouts and place in a bowl. Toss them with the vinegar, and spread them out on the lined baking sheet. Season with salt and pepper.
  4. Roast for 30-45 minutes until tender and caramelized.
  5. Return the cooked Brussels sprouts back into the bowl and toss with more vinegar (if needed for flavor and sweetness) and the dried cranberries.
  6. Optional: Add roasted walnuts, pumpkin seeds, chopped bacon, or crumbled goat cheese.
