Crockpot Chicken Mushroom Rice

Ingredients
  • 1 1/2 cups long grain organic rice
  • 3/4 cup organic Mushroom or Veggie Broth
  • 2 lbs skinless boneless chicken breast tenders, frozen
  • 8 oz sliced mushrooms
  • 1/2 ea yellow sweet onion chopped
  • 1 can Healthy Cream of Mushroom soup 10.5 oz
  • 1 can Healthy Cream of Chicken soup 10.5 oz
  • 3/4 tsp paprika
  • 1 tsp garlic powder
  • 1/4 tsp basil
  • 1/4 tsp thyme
  • 1/2 tsp Black pepper
  • 1 1/2 tsp salt

  • 3/4 cup organic Mushroom or Veggie Broth

  • 8 oz sliced mushrooms
  • 1/2 ea yellow sweet onion chopped
  • 1 can Healthy Cream of Mushroom soup 10.5 oz
  • 1 can Healthy Cream of Chicken soup 10.5 oz
  • 3/4 tsp paprika
  • 1 tsp garlic powder
  • 1/4 tsp basil
  • 1/4 tsp thyme
  • 1/2 tsp Black pepper
  • 1 1/2 tsp salt
Instructions
  1. Lightly spray the bottom of a large crock pot with cooking spray (or rub with coconut oil).
  2. Add broth and rice making sure the rice is slightly covered with liquid.
  3. Combine soups, mushrooms and seasonings in a bowl and set aside.
  4. Place onions on top of rice and then pour half of soup mixture on top.
  5. Place frozen chicken on top and pour the rest of the soup mixture over the chicken.
  6. Cook on high for 3 - 4 hours until rice is tender and chicken is cooked through.
