Apple, Squash, and Ginger Soup

Ingredients
  • 1.5 lbs butternut squash
  • 1 tsp extra virgin olive oil
  • 1 medium yellow onion (chopped)
  • 1 tsp fresh ginger (grated)
  • 2 apples (peeled & chopped)
  • 2.5 cups low sodium, organic chicken broth (or vegetable broth)
  • .5 cup organic coconut milk
  • .5 tsp dried thyme
  • salt & pepper to taste

  • 1 tsp extra virgin olive oil
  • 1 medium yellow onion (chopped)
  • 1 tsp fresh ginger (grated)
  • 2 apples (peeled & chopped)
  • 2.5 cups low sodium, organic chicken broth (or vegetable broth)
  • .5 cup organic coconut milk
  • .5 tsp dried thyme
  • salt & pepper to taste
Instructions
  1. Place squash in the microwave for 1-2 minutes to soften the peel.
  2. Cut squash in half, remove seeds, then Peel and chop into cubes.
  3. In a medium saucepan, put in olive oil with 4 tsp of broth over medium heat. Add onion and ginger and cook for 5 minutes, sitrring constantly.
  4. Add chopped squash, apples, trhe remainder of the broth, coconut milk and thyme. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  5. Remove from heat and puree in food processor until smooth.
  6. Season to taste with slat and pepper.
