5-Minute Salmon

Ingredients
  • 4 oz. salmon filet
  • Kosher salt
  • Black pepper
  • 2 tbs nonfat Bulgarian yogurt or Greek yogurt
  • 1-2 tbs sriracha sauce (Thai Chili Sauce)
  • 2-3 fresh cut lemon slices
  • 1 tbs parsley

  • 2-3 fresh cut lemon slices
  • 1 tbs parsley
Instructions
  1. Rinse salmon filet with cold water and pat dry.
  2. Place the salmon skin side down in a microwave-safe container. Season the salmon with salt and pepper. Set aside.
  3. In a small bowl, combine yogurt and sriracha sauce. Generously spread the yogurt mixture on top of the filet. Add lemon slices and parsley. Cover the dish tightly with microwave-safe plastic wrap.
  4. Microwave the fish for 3.5 minutes. Check the center of the filet for doneness with a fork. If there is any uncooked fish, microwave for another 30-45 seconds.
  5. Garnish with additional parsley and lemon wedges.
